Ingredients

  • 8 to 10 potatoes
  • 1/2 lb. bacon
  • 1 onion
  • 3 eggs
  • 3/4 c. sugar
  • 1/2 c. vinegar

Method

  • Peel and dice potatoes.
  • Cook until just tender.
  • Drain. While the potatoes cook, dice and fry bacon.
  • Pour over cooked and drained potatoes (bacon and drippings).
  • Dice onion and add.
  • Beat eggs.
  • Add sugar and vinegar.
  • Cook in bacon skillet over low heat and stirring constantly until mixture comes to a boil.
  • Pour over potato, onion and bacon mixture.
  • Mix gently and serve.
  • May be kept warm in oven at warm setting.
