Ingredients
- 8 to 10 potatoes
- 1/2 lb. bacon
- 1 onion
- 3 eggs
- 3/4 c. sugar
- 1/2 c. vinegar
Method
- Peel and dice potatoes.
- Cook until just tender.
- Drain. While the potatoes cook, dice and fry bacon.
- Pour over cooked and drained potatoes (bacon and drippings).
- Dice onion and add.
- Beat eggs.
- Add sugar and vinegar.
- Cook in bacon skillet over low heat and stirring constantly until mixture comes to a boil.
- Pour over potato, onion and bacon mixture.
- Mix gently and serve.
- May be kept warm in oven at warm setting.
