Ingredients

  • 8 potatoes, cooked, peeled and diced into bite-size pieces
  • 1/2 to 3/4 lb. Velveeta cheese, cubed
  • 1 c. mayonnaise
  • 1/2 c. onion, chopped
  • 1/2 c. celery, chopped
  • 1 Tbsp. margarine
  • 1 small jar pimento
  • salt and pepper to taste
  • 1/4 lb. bacon, cooked and crumbled

Method

  • Cook onions and celery in margarine until tender.
  • Toss with potatoes, cheese and pimento.
  • Spread into a 9 x 12-inch baking dish and top with bacon crumbs. Sprinkle with paprika and bake for 30 minutes in a 350° oven or until bubbly.
