Ingredients
- 8 potatoes, cooked, peeled and diced into bite-size pieces
- 1/2 to 3/4 lb. Velveeta cheese, cubed
- 1 c. mayonnaise
- 1/2 c. onion, chopped
- 1/2 c. celery, chopped
- 1 Tbsp. margarine
- 1 small jar pimento
- salt and pepper to taste
- 1/4 lb. bacon, cooked and crumbled
Method
- Cook onions and celery in margarine until tender.
- Toss with potatoes, cheese and pimento.
- Spread into a 9 x 12-inch baking dish and top with bacon crumbs. Sprinkle with paprika and bake for 30 minutes in a 350° oven or until bubbly.
