- 2 Tbsp. butter
- 2 large onions, chopped
- 1 green pepper, chopped
- 2 cans white hominy, drained (14 oz.)
- 1 (10 oz.) can tomatoes, peeled
- 1 lb. cooked sausage, hot or mild
- salt and pepper to taste
- dash of Worcestershire sauce
- 2 c. grated Cheddar cheese
- red pepper for extra taste (optional)
Method
- Fry sausage and crumble or brown like ground
- meat.
- Saute onions and pepper in butter.
- Add all other ingredients except cheese and simmer 20 minutes.
- In buttered casserole dish, alternate layers of hominy mixture and cheese, ending with cheese. Bake 15 minutes at 350°.
