Ingredients

  • 2 Tbsp. butter
  • 2 large onions, chopped
  • 1 green pepper, chopped
  • 2 cans white hominy, drained (14 oz.)
  • 1 (10 oz.) can tomatoes, peeled
  • 1 lb. cooked sausage, hot or mild
  • salt and pepper to taste
  • dash of Worcestershire sauce
  • 2 c. grated Cheddar cheese
  • red pepper for extra taste (optional)

Method

  • Fry sausage and crumble or brown like ground
  • meat.
  • Saute onions and pepper in butter.
  • Add all other ingredients except cheese and simmer 20 minutes.
  • In buttered casserole dish, alternate layers of hominy mixture and cheese, ending with cheese. Bake 15 minutes at 350°.
