Ingredients

  • 1 c. ripe bananas (3 medium)
  • 3/4 c. oil
  • 1 (18 1/2 oz.) yellow cake mix
  • 1/2 c. sugar
  • 5 eggs
  • 1 tsp. vanilla
  • 3 Tbsp. brown sugar
  • 1/2 c. chopped nuts (pecans)
  • 1 tsp. cinnamon

Method

  • Put bananas and oil in blender and liquify.
  • Add mixture and sugar to cake mix.
  • Beat well with electric mixer.
  • Add eggs, one at a time, beating well after each addition.
  • Add vanilla.
  • Combine 3 tablespoons brown sugar, 1/2 cup chopped nuts (pecans) and 1 teaspoon cinnamon.
  • Pour half the batter into greased and floured Bundt pan.
  • Sprinkle nuts, sugar and cinnamon over batter.
  • Pour remaining batter into pan.
  • Bake at 350° for about 1 hour.
