Ingredients
- 2 medium potatoes
- 3 slices bacon
- 1/3 c. onions
- 1 Tbsp. flour
- 2 to 3 tsp. sugar
- 3/4 tsp. salt
- 1/4 tsp. celery seed
- dash of pepper
- 1/3 c. water
- 3 Tbsp. vinegar
Method
- Boil potatoes in their jackets.
- Peel and slice thinly.
- Fry bacon slowly in skillet; drain on absorbent paper.
- Crumble. Saute onion in bacon fat until golden brown.
- Blend in flour and seasonings.
- Cook over low heat, stirring until smooth and bubbly. Remove from heat.
- Stir in water and vinegar.
- Bring to boil, stirring constantly.
- Boil 1 minute.
- Stir in potatoes and crumbled bits of bacon carefully.
- Remove from heat; cover and let stand until ready to serve.
- (This is good served with corned beef.)
