- 1 (18 oz.) can sweet potatoes or yams, cut in 1 inch thick slices
- 1 c. brown sugar
- 1 1/2 Tbsp. cornstarch
- 1 tsp. orange peel, grated
- 1/8 tsp. cinnamon
- 1 (5 1/2 oz.) can apricot nectar
- 1/3 c. water
- 1 (16 oz.) can apricot halves
- 1/2 c. pecans
Method
- Grease casserole.
- Boil sugar, cornstarch, orange peel, apricot nectar, water and spice.
- Pour over potatotes.
- Add apricots, pecans and one Tbsp. butter.
- Bake at 375°, uncovered, for 25 minutes (or for fresh sweet potatoes, 1 hour).
