Ingredients

  • 4 chicken breasts, cooked and diced
  • 1/2 c. diced celery
  • 3 hard-boiled eggs, sliced
  • 1 c. light mayonnaise
  • 1 c. fat-free sour cream
  • 2 tsp. diced onion
  • 1 can diced water chestnuts
  • 1/2 c. slivered almonds
  • 1/2 can mushroom soup
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 (4 oz.) can mushrooms
  • 1 c. Cheddar cheese, grated (light)
  • 1 small can onion rings

Method

  • Mix all ingredients except cheese and onion rings.
  • Bake with grated cheese on top at 350° for 30 minutes.
  • Top with onion rings and bake 15 minutes longer.
  • Let stand 10 minutes before serving. Makes 10 to 12 servings.
