- 4 chicken breasts, cooked and diced
- 1/2 c. diced celery
- 3 hard-boiled eggs, sliced
- 1 c. light mayonnaise
- 1 c. fat-free sour cream
- 2 tsp. diced onion
- 1 can diced water chestnuts
- 1/2 c. slivered almonds
- 1/2 can mushroom soup
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 (4 oz.) can mushrooms
- 1 c. Cheddar cheese, grated (light)
- 1 small can onion rings
Method
- Mix all ingredients except cheese and onion rings.
- Bake with grated cheese on top at 350° for 30 minutes.
- Top with onion rings and bake 15 minutes longer.
- Let stand 10 minutes before serving. Makes 10 to 12 servings.
