Ingredients
- 2 c. black-eyed peas
- 1 medium ham hock
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 1 small bay leaf
- 2 to 3 c. water
- 1/2 tsp. salt and pepper
- 1 1/2 c. uncooked rice
Method
- Simmer peas, ham hock, onion, celery and bay leaf covered until peas are tender.
- Cook rice.
- Combine peas, rice, ham and liquid from peas.
- Simmer.
