Ingredients

  • 2 pkg. yeast
  • 6 Tbsp. shortening
  • 4 c. whole wheat flour
  • 1/2 c. instant potatoes (dry)
  • 6 1/2 to 8 c. flour
  • 5 c. warm water (110~ to 115~)
  • 1/4 c. honey
  • 1 Tbsp. salt

Method

  • Sprinkle yeast in 1/2 cup warm water.
  • Melt shortening in saucepan.
  • Remove and add honey and remaining 4 1/2 cups water. Add the whole wheat flour, instant potatoes, dry milk and salt to saucepan.
  • Beat until smooth.
  • Add yeast and beat well.
  • With a wooden spoon, add enough white flour to make dough leave sides of bowl.
  • Let rise 1 to 1 1/2 hours.
  • Punch down and divide into 3 loaves.
  • Bake at 400° for 50 minutes.
