Ingredients

  • 1/2 c. oleo or butter
  • 1/2 c. honey
  • 1/2 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2/3 c. flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. quick rolled oats
  • 1 c. flaked coconut
  • 1/2 c. chopped nuts

Method

  • Cream butter, honey and sugar until light and fluffy.
  • Add egg and vanilla; beat well.
  • Sift flour, soda, baking powder and salt. Add to creamed mixture.
  • Stir in oatmeal, coconut and nuts.
  • Spread in a greased 13 x 9-inch baking pan.
  • Bake in a 350° oven for 20 to 25 minutes.
  • When cool, cut into bars about 1 1/2 x 2 1/2-inches.
