Ingredients
- 4 oz. dry pasta (tri-colored is nice)
- 2 c. raw cauliflower, broken up
- 1/2 lb. frozen chopped broccoli
- 1/2 c. thinly sliced celery
- 1 can kidney beans, drained (reserve 1/2 c. liquid)
- 1/2 can whole olives
- 1/4 c. fat-free Honey Dijon salad dressing
- 1/4 c. nonfat Parmesan cheese
- 1 tsp. salt
- 1/4 tsp. pepper
Method
- Boil pasta, cauliflower, broccoli and celery for 10 to 12 minutes.
- Drain and rinse with cold water.
- Add remaining ingredients and combine thoroughly but gently.
- Chill.
