Ingredients

  • 4 oz. dry pasta (tri-colored is nice)
  • 2 c. raw cauliflower, broken up
  • 1/2 lb. frozen chopped broccoli
  • 1/2 c. thinly sliced celery
  • 1 can kidney beans, drained (reserve 1/2 c. liquid)
  • 1/2 can whole olives
  • 1/4 c. fat-free Honey Dijon salad dressing
  • 1/4 c. nonfat Parmesan cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper

Method

  • Boil pasta, cauliflower, broccoli and celery for 10 to 12 minutes.
  • Drain and rinse with cold water.
  • Add remaining ingredients and combine thoroughly but gently.
  • Chill.
