Ingredients

  • 1 pkg. yeast
  • 1/4 c. warm water
  • 1 1/2 c. whole wheat flour
  • 1 1/2 c. unbleached white flour
  • 2 tsp. sugar
  • 1 1/2 tsp. salt
  • 2 Tbsp. butter
  • 1 c. cold water

Method

  • Put flour, sugar and salt in processor with steel blade already in processor.
  • Make one turn of processor to mix.
  • Add butter; turn on and off.
  • Add yeast and water; turn on and off. Add 1/3 cup cold water; quickly blend.
  • Let dough rest.
  • Butter bowl and pan; clean up mess.
  • With machine running, add more water slowly until ball forms.
  • Let ball rotate about 1 minute, then place dough in greased bowl.
  • Turn and cover; let rise until double.
  • Knead until elastic.
  • Place in pan; let rise again. Preheat oven to 400°.
  • Put bread in; reduce heat to 325°.
  • Bake for 40 minutes.
