Ingredients
- 1 pkg. yeast
- 1/4 c. warm water
- 1 1/2 c. whole wheat flour
- 1 1/2 c. unbleached white flour
- 2 tsp. sugar
- 1 1/2 tsp. salt
- 2 Tbsp. butter
- 1 c. cold water
Method
- Put flour, sugar and salt in processor with steel blade already in processor.
- Make one turn of processor to mix.
- Add butter; turn on and off.
- Add yeast and water; turn on and off. Add 1/3 cup cold water; quickly blend.
- Let dough rest.
- Butter bowl and pan; clean up mess.
- With machine running, add more water slowly until ball forms.
- Let ball rotate about 1 minute, then place dough in greased bowl.
- Turn and cover; let rise until double.
- Knead until elastic.
- Place in pan; let rise again. Preheat oven to 400°.
- Put bread in; reduce heat to 325°.
- Bake for 40 minutes.
