Ingredients

  • 12 medium Roma Tomatoes
  • 1 small cooking onion
  • 1/2 Bulb of garlic
  • 1 cup Vegetable broth
  • 1 cup 18% table cream
  • 1/4 cup White sugar
  • 1 bunch Fresh Basil Leaves

Method

  • Boil tomatoes whole in large pot for 10 - 15 minutes, or until peels start to come off.
  • Allow to cool and peel and core tomatoes.
  • Chop onions finely and sweat in large sauce pan with olive oil
  • Chop garlic and add to sauteed onions
  • Add peeled and cores tomatoes and mash with potato masher.
  • Allow to simmer for 15 minutes.
  • Blend entire mixture and strain through metal strainer.
  • Heat again and add broth and cream and bring to slight boil.
  • Add salt and pepper to taste.
  • Allow to simmer for another 60 minutes.
  • 10 minutes before serving add basil and sugar.
  • Serve with your favourite grilled cheese sandwich.
