Ingredients
- 12 medium Roma Tomatoes
- 1 small cooking onion
- 1/2 Bulb of garlic
- 1 cup Vegetable broth
- 1 cup 18% table cream
- 1/4 cup White sugar
- 1 bunch Fresh Basil Leaves
Method
- Boil tomatoes whole in large pot for 10 - 15 minutes, or until peels start to come off.
- Allow to cool and peel and core tomatoes.
- Chop onions finely and sweat in large sauce pan with olive oil
- Chop garlic and add to sauteed onions
- Add peeled and cores tomatoes and mash with potato masher.
- Allow to simmer for 15 minutes.
- Blend entire mixture and strain through metal strainer.
- Heat again and add broth and cream and bring to slight boil.
- Add salt and pepper to taste.
- Allow to simmer for another 60 minutes.
- 10 minutes before serving add basil and sugar.
- Serve with your favourite grilled cheese sandwich.
