Ingredients
- 6 Medium Potatoes, peeled and thinly sliced (best to use a food processor)
- 4 Tablespoons Salt
- Oil for Deep Frying
Method
- As you slice the potatoes, place them in a very large bowl of water. Drain the bowl and rinse the potato slices. Refill the bowl with water and add the salt.
- Let the potato slices sit in the water for at least 30 minutes, then drain and rinse again.
- Heat deep-fryer to 365 degrees, and fry potatoes in relatively small batches so that they can float freely in the oil. Use a long spoon or other appopriate utensil to stir the slices occasionally as they cook (be very careful of the hot oil!!!)
- Once the slices start to turn a golden color with very slight browning, remove them and place on a paper towel. Sprinkle with salt (and vinegar, pepper or barbeque powder for different variety) immediately, then let cool until they can be handled comfortably.
- Repeat until all slices have been fried.
