Ingredients

  • 3-5/8 ounces, weight Cake Flour
  • 1-1/4 teaspoon Baking Powder
  • 1 ounces, weight Butter
  • 1-7/8 ounces, weight Sugar
  • 1 whole Egg
  • 1 Tablespoon Vanilla
  • 1 tablespoon, 2 teaspoons, 1-1/4 pinches Milk
  • 1 whole Large Ripe Banana -mashed Well
  • 1 Tablespoon Papaya -mashed Well

Method

  • Sift together the flour and baking powder. Next cream butter and sugar with an electric hand mixer until light and fluffy. Add egg, vanilla and milk. Mix well with a spoon.
  • Stir the flour mixture into the creamed mixture. Mix with a wooden spoon. Add banana and papaya. Mix to combine but don't over mix.
  • Now line a muffin tin with paper cups (recipe should make 10 muffins). Pour batter into cups. Fill only 1/2 to 2/3 full.
  • Bake at 180°C (355°F) for about 20 minutes. Muffins are ready when the top springs back when you touch it with your finger.
  • Serve and enjoy.
