Ingredients

  • 1 tsp. salt
  • 1/4 tsp. paprika
  • 2 egg yolks
  • 2 c. salad oil
  • 1 Tbsp. hot water
  • 1/2 tsp. dry mustard
  • dash of cayenne
  • 2 Tbsp. vinegar
  • 2 Tbsp. lemon juice

Method

  • Mix dry ingredients.
  • Add egg yolks and blend.
  • Add vinegar; mix well with mixer on medium speed.
  • Add salad oil, 1 teaspoon at a time, beating with rotary or electric beater, until 1/4 cup has been added.
  • Add remaining oil in increasing amounts, alternating last 1/2 cup with lemon juice.
  • Beat in hot water; this takes away oily appearance.
  • Makes 2 cups.
