Ingredients

  • 1 pkg. frozen hash brown potatoes
  • 1 c. sour cream alternative
  • 1/2 c. low-sodium chicken broth
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1 1/4 c. skim milk
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 3 Tbsp. flour
  • 1/2 tsp. dry mustrrd
  • 1/2 c. reduced fat Cheddar cheese
  • 1/2 c. low-fat Mozzarella or Swiss cheese
  • 1 c. corn flakes, crushed

Method

  • Saute onion slightly in Pam-sprayed pan.
  • Add flour, mustard, salt and pepper.
  • Gradually add milk and broth, stirring constantly.
  • Cook until thickened.
  • Remove from heat and stir in sour cream.
  • Combine with potatoes and top with cheese and corn flakes, if desired.
  • Bake in 13 x 9-inch Pam-sprayed pan at 350° for 35 minutes.
