Ingredients

  • 7-10lb ham
  • Glaze:
  • 3/4c maple syrup
  • 1/2c orange marmalade
  • 1T dijon mustard
  • 2T unsalted butter
  • 1T black pepper
  • 1/4t cinnamon

Method

  • Place ham cut-side down into a large oven bag. Tie bag close to ham (snip off extra) and poke 4 holes around top of bag. Put into 9 by 13 inch baking pan. Place in a 250 degree oven until internal temp is at 100 degree, about an hour to an hour and a half.
  • Make glaze: Heat all ingredients in small saucepan over medium, until reduced to 1c, about 5 mins.
  • Remove ham from oven. Cut bag and pull down around ham. Brush ham with 1/3 of the glaze. (if glaze is too thick to spread reheat on stove briefly) Return to oven for 10 mins, raising over temp to 350. Remove ham to cutting board. Brush with another 1/3 of glaze. Tent with foil and let sit. Add a few tablespoons (about 4) of ham juices from pan to the remaining glaze. Heat over medium about 5 mins.
  • Carve ham: Place cut side down; carve downward along bone all the way down. Serve with sauce.
