- 1/4 cup KRAFT Lite House Italian Dressing
- 1 lb. boneless skinless chicken breast
- 2 tsp. minced garlic clove
- 28 oz. canned diced tomatoes, undrained
- 2 cups instant brown rice, uncooked
- 1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
- 1 cup chopped fresh tomato
- 2 Tbsp. chopped fresh cilantro
- 2 cups frozen unsweetened strawberries, thawed
- 32 fl oz (4 cups) drinking water
Method
- Heat dressing in a large skillet over medium heat.
- Add chicken and garlic; cover.
- Cook chicken on each side until browned.
- Remove from skillet; set aside.
- Add canned tomatoes and 1 cup of water to skillet.
- Stir in rice; bring to a boil.
- Reduce heat to low and simmer, uncovered, 10 min.
- Return chicken to skillet.
- Sprinkle with cheese; cover.
- Cook on low heat for 5 min.
- Top with fresh tomato and cilantro.
- Enjoy 1/2 cup strawberries per person for dessert.
- Serve meal with an 8 fl oz glass of water per person.
