Ingredients

  • 1/4 cup KRAFT Lite House Italian Dressing
  • 1 lb. boneless skinless chicken breast
  • 2 tsp. minced garlic clove
  • 28 oz. canned diced tomatoes, undrained
  • 2 cups instant brown rice, uncooked
  • 1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
  • 1 cup chopped fresh tomato
  • 2 Tbsp. chopped fresh cilantro
  • 2 cups frozen unsweetened strawberries, thawed
  • 32 fl oz (4 cups) drinking water

Method

  • Heat dressing in a large skillet over medium heat.
  • Add chicken and garlic; cover.
  • Cook chicken on each side until browned.
  • Remove from skillet; set aside.
  • Add canned tomatoes and 1 cup of water to skillet.
  • Stir in rice; bring to a boil.
  • Reduce heat to low and simmer, uncovered, 10 min.
  • Return chicken to skillet.
  • Sprinkle with cheese; cover.
  • Cook on low heat for 5 min.
  • Top with fresh tomato and cilantro.
  • Enjoy 1/2 cup strawberries per person for dessert.
  • Serve meal with an 8 fl oz glass of water per person.
