Ingredients
- 2 lb. beef roast (3 to 4-inches thick)
- 2 Tbsp. shortening
- 1 (1 lb.) can tomatoes
- 1/4 c. dry red or white wine
- 3/4 c. chopped onions
- 1/4 c. finely chopped carrot
- 1/4 c. finely chopped celery
- 1/2 tsp. minced garlic
- 1 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/4 tsp. pepper
Method
- Brown meat well in shortening.
- Add remaining ingredients. Cover and bake in 325° oven for 1 1/2 to 2 hours, until meat is fork-tender.
- Make gravy with drippings.
- Serves 4.
