Ingredients
- 1 tsp. dried whole rosemary, crushed
- 1 1/2 tsp. black pepper, freshly ground
- 1 tsp. poultry seasoning
- 1 whole chicken, cut up and skinned (can be left whole)
- 1 tsp. Chinese red pepper (Cajun)
- 1/2 c. pineapple juice
- 5 shallots, minced
- paprika
Method
- Combine all spices and pineapple juice; brush or pour over all of the chicken.
- Cover and bake at 350° for 35 minutes.
- Uncover and cook 25 minutes longer or until done.
