Ingredients

  • 1 (3 oz) pkg. lime Jell-O
  • 3/4 c. water (add to pineapple juice)
  • 1 (5 oz.) can evaporated milk
  • 1 (3 oz.) pkg. cream cheese
  • 1/2 c. mayonnaise
  • 1 (8 oz.) can crushed pineapple, drained
  • 1/2 c. chopped pecans
  • 1 Tbsp. lemon juice
  • 1/2 c. chopped celery

Method

  • Mix Jell-O with boiling water and pineapple juice.
  • Mash cream cheese with mayonnaise and add milk.
  • Add cream cheese mixture to Jell-O and congeal slightly before adding pineapple, mixed with lemon juice, pecans and celery.
  • Congeal overnight.
  • Serves 6 to 8.
