- 1 lb. ground beef
- 1 small onion, chopped
- 1 stalk celery, chopped
- 1 small sweet pepper, chopped
- 2 c. tomatoes
- 1/4 tsp. each: oregano and marjoram
- 1 c. cornmeal mixture
- 8 oz. tomato sauce
- 1 tsp. salt
- 1 tsp. parsley flakes
- 1 can kidney beans
Method
- Brown beef and onion.
- Add celery, pepper, tomatoes, sauce, salt and herbs.
- Add beans last.
- Simmer for 20 minutes and pour into oblong baking pan.
- Drizzle thin cornmeal mixture over top and bake at 425° for 20 to 25 minutes.
- A salad is all you need to add for a complete meal.
