Ingredients

  • 1 5/8 cups flour the variety used for making pizza dough
  • 1 teaspoon baking powder
  • 5/8 cup Parmesan cheese grated
  • 1 tablespoon oregano
  • 4 2/3 tablespoons ketchup
  • 1 medium egg
  • 5 3/8 tablespoons milk
  • 7 3/8 tablespoons extra-virgin olive oil
  • 6 tablespoons black olives chopped

Method

  • Preheat the oven to 180C.
  • Combine the flour, baking powder, oregano, and parmesan cheese in a bowl.
  • In another bowl beat together the egg, oil, ketchup, and milk.
  • Pour the liquid ingredients onto the dry ingredients, add the black olives and quickly combine.
  • Pour the batter into the muffin liners.
  • Bake for approximately 20 minutes.
  • Remove from the oven and serve warm.
