Ingredients

  • 4 c. cooked and cubed potatoes
  • 1 1/2 c. fully cooked ham, cubed
  • 1/2 c. chopped onion
  • 1/2 c. shredded Velveeta cheese
  • 3 c. milk
  • 3 Tbsp. flour
  • 3 Tbsp. butter
  • dash of salt and pepper

Method

  • Saute onion in butter until tender.
  • Add the ham.
  • Stir together the flour and small amounts of milk (gradually, to prevent lumps).
  • Add to onion and ham.
  • Stir in potatoes and seasonings; stir until thickened.
  • Add cheese and stir until melted.
  • Serves 8.
