Ingredients

  • 2 pounds ground beef, lean
  • 1 cup onions chopped
  • 1 cup cracked wheat (bulgur) uncooked
  • 2 cups tomatoes fresh,
  • 2 cups water
  • 2 teaspoons beef stock
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon oregano
  • 1/4 teaspoon garlic
  • 1/4 teaspoon black pepper
  • 1/2 cup parmesan, parmigiano-reggiano cheese, grated grated
  • 3 tablespoons parsley leaves snipped

Method

  • Cook and stir the meat and onion in a large skillet until the meat is brown.
  • Drain off the excess fat.
  • Stir in the remaining ingredients except the grated Parmesan Cheese.
  • Heat to boiling then reduce the heat and simmer, covered, stirring occasionally, until the wheat is tender, about 30 minutes.
  • Stir in the cheese and garnish with additional snipped parsley and/or Parmesan Cheese.
