Ingredients

  • fresh spinach leaves
  • 1 green bell pepper, diced
  • 2 red bell peppers, diced
  • 2 fresh garlic cloves
  • olive oil
  • 1 (20 ounce) package Simply Potatoes

Method

  • Place 3-4 tablespoons of olive oil in pan with green and red peppers, fresh garlic and mix for a few minutes.
  • Then add potatoes and let cook for another ten minutes or until potatoes are done to your liking.
  • Add chopped fresh spinach, mix, and let cook for a few minutes and cover.
  • There you have a great side dish or a nice snack.
