- 4 8-inch whole wheat tortillas
- 1 cup low fat cheddar cheese
- Cooking spray
- Fat free sour cream (optional)
- Salsa (optional)
- Easy Guacamole-
- 1 whole avocado, pit and skin removed
- 1/2 cup chopped tomatoes
- 1/2 cup chopped onion
- 1/2 TBS garlic
- 1/2 whole fresh lime
- Filling-
- 1 can fat free refried beans (omit if using left over chicken/steak)
- 1/2 TBS garlic
- 1/2 onion chopped
- 2 sliced jalapenos, seeds and stem removed
Method
- To make guacamole-
- Remove pit and skin from avocado, mash in a small bowl with a fork.
- Chop onion, tomato, and garlic. Add to avocado.
- Squeeze lime juice over avocado mixture, Mix all together until incorporated.
- To make bean filling-
- Heat small skillet over medium heat, spray with cooking spray.
- Add garlic, sliced jalapeno, and onion. Cook until onion begins to soften.
- Add refried beans, cook until slightly heated (If you are using grilled chicken or steak, add now instead of beans).
- To make quesadilla-
- Preheat oven to 400
- Cover baking sheet with foil, lightly spray with cooking spray.
- Before filling tortillas fold them over in half (this will make it easier when you fill them).
- Put folded tortillas on baking sheet, unfold and fill with 1/4 of guacamole mixture.
- Add 1/4 of skillet mixture.
- Add 1/4 cup of low fat cheese to each tortilla.
- Fold tortilla over (make sure the filling doesn't get to close to the edges, or it will burn in the oven) and spray lightly with cooking spray.
