Ingredients

  • 1 Chicken thigh meat (skin removed)
  • 1 piece Ginger
  • 1 tbsp * Soy sauce
  • 1 tbsp * Mirin
  • 1 tsp * Sugar

Method

  • Take the fat off the skinless chicken thigh, and cut into bite-sized pieces.
  • Finely julienne or grate the ginger.
  • Put the chicken in a non-stick frying pan and cook over high heat.
  • When the chicken changes color, turn it over and cook until both sides are golden brown.
  • Push the chicken to one side of the frying pan.
  • Add the ginger to the empty part of the frying pan.
  • Add the * ingredients and simmer until bubbly to make the sauce.
  • Mix the chicken with the teriyaki sauce.
  • Cook over high heat until there's no excess moisture in the pan and the chicken is shiny.
  • Serve with mizuna greens or lettuce.
