Ingredients
- 6 ouches short pasta
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons chopped parsley
- 2 chopped anchovy fillets
- 1 tablespoon chopped capers
- 1 teaspoon grated lemon zest
- 1/2 pound cut up tomatoes
Method
- Cook 6 ouches short pasta; let cool. In a large bowl, whishk together 3 tablespoons olive oil, 2 tablespoons lemon juice, 2 tablespoons chopped parsley, 2 chopped anchovy fillets, 1 tablespoon chopped capers, and 1 teaspoon grated lemon zest. Season with salt and pepper. Add the pasta and 1/2 pound of cut up tomatoes and toss to combine.
