- 4 tablespoons canola oil
- 1 1/3 cups whole wheat flour
- 1/4 cup Splenda brown sugar blend
- 1/2 teaspoon baking soda
- 2 teaspoons baking powder
- 1 pinch salt
- 1 cup nonfat yogurt
- 1 egg
- 1 cup frozen blueberries
- 1 orange, zest of
Method
- Preheat oven to 400°F.
- Combine the dry ingredients in a large bowl.
- Whisk wet ingredients in a separate smaller bowl.
- Pour wet into dry and combine - but do not over work.
- Add the orange zest.
- Fold in blueberries.
- Spoon into greased 12-muffin pan.
- Bake for 20 minutes.
- Enjoy!
