Ingredients

  • 8 ounces, weight Sharp Cheddar Cheese, Shredded
  • 8 ounces, weight Monterey Jack Cheese, Shredded
  • 2 Tablespoons Cornstarch
  • 1 can Evaporated Milk, 12 Oz Can
  • 1 Tablespoon Hot Sauce
  • 1 can Black Beans, Drained And Rinsed (15 Oz. Can)
  • 1 can Rotel Diced Tomatoes And Green Chiles, Drained ( 10 Oz Can)
  • Tortilla Chips For Serving

Method

  • 1.
  • In a medium sized saucepan, toss together the shredded cheeses and cornstarch until evenly coated.
  • Stir in the evaporated milk and hot sauce.
  • 2.
  • Cook over medium heat for about 10 minutes or until cheese is melted, stirring often.
  • 3.
  • Once cheese is melted, add drained black beans and drained Ro-tel.
  • Cook until heated through then remove from heat.
  • Serve with tortilla chips.
