Ingredients
- 1/3 c. unsweetened pineapple juice
- 1/3 c. low-sodium soy sauce
- 1/3 c. sherry or chicken broth
- 2 cloves garlic
- 1 Tbsp. parsley
- pepper
- 4 chicken breasts, skinned, deboned and split lengthwise
Method
- Mix pineapple juice, soy sauce, sherry or stock, garlic, parsley and pepper. Marinate chicken breasts for 3 to 4 hours or overnight.
- (The marinade adds no significant calories.)
- Grill chicken.
