Ingredients

  • 3 c. flour
  • 2 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 c. chopped nuts
  • 3 eggs, beaten
  • 2 c. mashed bananas
  • 1 (8 oz.) can crushed pineapple, drained
  • 2 tsp. vanilla

Method

  • Combine dry ingredients.
  • Stir in pecans and set aside.
  • Mix remaining ingredients together.
  • Then add to dry ingredients, stirring just until batter is moistened.
  • Spoon batter into 2 greased and floured loaf pans.
  • Bake in a 350° oven for 1 hour and 5 minutes or until loaves test done.
  • Cool 10 minutes before transferring from pans to wire rack.
  • Cool completely before slicing.
  • Makes 2 loaves.
