- 9 cooked lasagna noodles
- 6 Tbsp. butter or margarine
- 3 Tbsp. oil
- 1 c. chopped onion
- 1 clove garlic, minced
- 1 eggplant, cut cube size
- 1 zucchini, cut cube size
- 2 green peppers, chopped
- 6 tomatoes, chopped
- 1 1/2 tsp. salt
- 1 tsp. basil
- 1 tsp. pepper
- 6 Tbsp. flour
- 3 c. milk
- 1 c. grated cheese
Method
- Heat 3 tablespoons each of butter and oil in a large frying pan.
- Add onion and garlic; cook until soft.
- Toss in eggplant and brown 5 minutes.
- Add zucchini, peppers, tomatoes, salt, basil and pepper.
- Simmer, covered, 15 minutes, then remove lid and cook over medium heat about 10 minutes.
- Set aside.
