Ingredients

  • 9 cooked lasagna noodles
  • 6 Tbsp. butter or margarine
  • 3 Tbsp. oil
  • 1 c. chopped onion
  • 1 clove garlic, minced
  • 1 eggplant, cut cube size
  • 1 zucchini, cut cube size
  • 2 green peppers, chopped
  • 6 tomatoes, chopped
  • 1 1/2 tsp. salt
  • 1 tsp. basil
  • 1 tsp. pepper
  • 6 Tbsp. flour
  • 3 c. milk
  • 1 c. grated cheese

Method

  • Heat 3 tablespoons each of butter and oil in a large frying pan.
  • Add onion and garlic; cook until soft.
  • Toss in eggplant and brown 5 minutes.
  • Add zucchini, peppers, tomatoes, salt, basil and pepper.
  • Simmer, covered, 15 minutes, then remove lid and cook over medium heat about 10 minutes.
  • Set aside.
