Ingredients

  • 12 lb boiled ham, cut into 1/2 inch dice (about 2 1/2 cups)
  • 2 tablespoons butter
  • 1 teaspoon butter
  • 2 tablespoons flour
  • 1 cup milk
  • 18 teaspoon nutmeg (try fresh ground)
  • salt & freshly ground black pepper
  • 1 tablespoon shallot, minced
  • 3 tablespoons dry sherry

Method

  • Heat 2 tablespoons butter in a skillet.
  • Sprinkle flour around pan and stir with a wire whisk.
  • Cook 30 second to 1 minute.
  • Add milk, stirring with the whisk.
  • Season with nutmeg, salt and pepper.
  • Turn off heat and allow to cool, stirring occasionally, about 5 minutes.
  • Meanwhile, in another skillet heat 1 teaspoon of butter and cook ham for 1 minute.
  • Add shallot, cook another minute.
  • Stir in the sherry and heat through.
  • Add the cream sauce and turn off the heat.
  • Serve.
