Ingredients
- 12 lb boiled ham, cut into 1/2 inch dice (about 2 1/2 cups)
- 2 tablespoons butter
- 1 teaspoon butter
- 2 tablespoons flour
- 1 cup milk
- 18 teaspoon nutmeg (try fresh ground)
- salt & freshly ground black pepper
- 1 tablespoon shallot, minced
- 3 tablespoons dry sherry
Method
- Heat 2 tablespoons butter in a skillet.
- Sprinkle flour around pan and stir with a wire whisk.
- Cook 30 second to 1 minute.
- Add milk, stirring with the whisk.
- Season with nutmeg, salt and pepper.
- Turn off heat and allow to cool, stirring occasionally, about 5 minutes.
- Meanwhile, in another skillet heat 1 teaspoon of butter and cook ham for 1 minute.
- Add shallot, cook another minute.
- Stir in the sherry and heat through.
- Add the cream sauce and turn off the heat.
- Serve.
