- 1 picnic ham bone with generous amount ham still on bone (spiral hams work great!)
- 1 large yellow onion, coarsely chopped
- 4 cloves fresh minced garlic
- salt and pepper to taste
- 2 to 3 cans stewed tomatoes
- 1 pkg. frozen corn
- 1 box frozen okra
- 1 can green beans
- 1 to 2 cans sliced new potatoes
- 1 to 2 c. chopped fresh carrots
- 2 tsp. Morton Nature's Seasons
Method
- Place ham bone, chopped onion, minced garlic and salt and pepper in large stock pot and cover with water.
- Cover and simmer 2 to 3 hours until meat falls from bone.
- Remove bone and meat from stock.
- Allow meat to cool, then remove all fat, gristle and return only lean ham meat to soup stock.
- Add tomatoes to stock and simmer approximately 1/2 hour.
- Add remaining ingredients and simmer approximately 30 minutes to 1 hour.
- May adjust garlic and other seasonings to taste.
- May adjust choice of vegetables to taste.
