Ingredients

  • 4 to 5 medium potatoes
  • 2 onions
  • 1 tsp. salt
  • 3 Tbsp. flour
  • 3 Tbsp. margarine
  • 1/4 tsp. pepper
  • 1 c. salted boiling water
  • 1/2 c. paprika
  • 2 c. milk
  • 1 1/2 to 2 c. cubed ham
  • 1 tsp. parsley flakes
  • 1 to 2 slices American cheese
  • grated Parmesan cheese

Method

  • Slice potatoes and onion thin.
  • Put in boiling water, cover and cook 5 minutes.
  • Drain.
  • Melt margarine.
  • Stir in flour, pepper and paprika.
  • Cook about 1 minute.
  • Gradually add milk, stirring until it begins to thicken.
  • Grease casserole and layer potatoes, onion and ham.
  • Sprinkle with parsley and cover with half of the sauce.
  • Put American cheese on this.
  • Repeat layer ending with sauce.
  • Sprinkle with grated cheese.
  • Bake, uncovered, in 400° oven for 25 to 30 minutes.
  • Serves 4 to 6.
