- 4 to 5 medium potatoes
- 2 onions
- 1 tsp. salt
- 3 Tbsp. flour
- 3 Tbsp. margarine
- 1/4 tsp. pepper
- 1 c. salted boiling water
- 1/2 c. paprika
- 2 c. milk
- 1 1/2 to 2 c. cubed ham
- 1 tsp. parsley flakes
- 1 to 2 slices American cheese
- grated Parmesan cheese
Method
- Slice potatoes and onion thin.
- Put in boiling water, cover and cook 5 minutes.
- Drain.
- Melt margarine.
- Stir in flour, pepper and paprika.
- Cook about 1 minute.
- Gradually add milk, stirring until it begins to thicken.
- Grease casserole and layer potatoes, onion and ham.
- Sprinkle with parsley and cover with half of the sauce.
- Put American cheese on this.
- Repeat layer ending with sauce.
- Sprinkle with grated cheese.
- Bake, uncovered, in 400° oven for 25 to 30 minutes.
- Serves 4 to 6.
