Ingredients

  • 8 slices bread, brioche or sourdough
  • 8 oz sliced ham
  • 1/3 C sun dried tomatoes, drained
  • 8 slices aromatic cheese
  • 2 eggs, lightly beaten
  • 1/3 cup milk
  • sea salt and pepper
  • butter for cooking

Method

  • Whisk together the eggs, milk, salt and pepper. Dip one side of each slice of bread in the egg mixture. Drain off excess. Heat the butter in a large nonstick frying pan over high heat. Place bread in pan and layer ham, cheese and tomatoes. Cook for 2-3 minutes on each side until golden and cheese is melted.
