Ingredients

  • 6 medium tomatoes, peeled
  • 2 tsp. salt
  • 1 medium onion, chopped finely
  • 2 tsp. lemon juice
  • 1 or 2 cans medium green chilies, chopped fine
  • 2 very ripe medium avocados
  • 3 crisp slices bacon
  • 6 lettuce leaves

Method

  • Core tomatoes; scoop out center.
  • Sprinkle insides with 1/2 teaspoon salt.
  • Turn over to drain.
  • Chill.
  • Chop tomato centers fine.
  • Add onion, chilies, lemon juice and salt.
  • Mix. Just before serving, mash avocado and blend into tomato mixture.
  • Fill tomato cups.
  • Top with crumbled bacon.
  • Serve on lettuce leaves.
