Ingredients
- 6 medium tomatoes, peeled
- 2 tsp. salt
- 1 medium onion, chopped finely
- 2 tsp. lemon juice
- 1 or 2 cans medium green chilies, chopped fine
- 2 very ripe medium avocados
- 3 crisp slices bacon
- 6 lettuce leaves
Method
- Core tomatoes; scoop out center.
- Sprinkle insides with 1/2 teaspoon salt.
- Turn over to drain.
- Chill.
- Chop tomato centers fine.
- Add onion, chilies, lemon juice and salt.
- Mix. Just before serving, mash avocado and blend into tomato mixture.
- Fill tomato cups.
- Top with crumbled bacon.
- Serve on lettuce leaves.
