Ingredients

  • 3 sweet potatoes, peeled and cut lengthwise into 1/2-inch-thick slices
  • 3 tablespoons olive oil
  • 1 tablespoon dried thyme
  • 14 teaspoon cayenne pepper
  • coarse salt & fresh ground pepper
  • 2 tablespoons butter
  • 2 scallions, thinly sliced

Method

  • Toss the potatoes in the oil, thyme, and cayenne.
  • Season with salt and pepper.
  • Grill on a preheated grill set to medium heat, turning frequently.
  • When they are tender, return the potatoes to the bowl.
  • Add the butter and scallions.
  • Toss and serve.
