Ingredients
- 3 sweet potatoes, peeled and cut lengthwise into 1/2-inch-thick slices
- 3 tablespoons olive oil
- 1 tablespoon dried thyme
- 14 teaspoon cayenne pepper
- coarse salt & fresh ground pepper
- 2 tablespoons butter
- 2 scallions, thinly sliced
Method
- Toss the potatoes in the oil, thyme, and cayenne.
- Season with salt and pepper.
- Grill on a preheated grill set to medium heat, turning frequently.
- When they are tender, return the potatoes to the bowl.
- Add the butter and scallions.
- Toss and serve.
