Ingredients
- 6 slices bacon
- 13 cup maple syrup
- 6 ounces smoked mozzarella cheese, grated and divided
- 4 slices bread, something hearty
- 1 12 tablespoons butter, soft
Method
- In a heavy skillet, cook the bacon to the desired crispness.
- Drain bacon on paper towel.
- Discard fat in pan and wipe out.
- Return bacon to skillet and add maple syrup.
- Bring to a boil then reduce to a simmer.
- Cook, stirring frequently, until thick and caramelized.
- Set aside off heat.
- Preheat a cast-iron skillet over medium heat.
- Butter one side of each slice of bread.
- Working quickly, place two slices of bread in the skillet, butter side down.
- Divide half the cheese between the two slices (1/4 of the total on each slice).
- Divide the bacon and glaze between the two slices.
- Divide the remaining cheese evenly, then top with the remaining bread, butter side up.
- Press lightly with a spatula.
- Cook, covered, 5 minutes, or until well-browned.
- Carefully flip each sandwich and cook, uncovered, another 5 minutes or until well-browned.
