Ingredients

  • 6 slices bacon
  • 13 cup maple syrup
  • 6 ounces smoked mozzarella cheese, grated and divided
  • 4 slices bread, something hearty
  • 1 12 tablespoons butter, soft

Method

  • In a heavy skillet, cook the bacon to the desired crispness.
  • Drain bacon on paper towel.
  • Discard fat in pan and wipe out.
  • Return bacon to skillet and add maple syrup.
  • Bring to a boil then reduce to a simmer.
  • Cook, stirring frequently, until thick and caramelized.
  • Set aside off heat.
  • Preheat a cast-iron skillet over medium heat.
  • Butter one side of each slice of bread.
  • Working quickly, place two slices of bread in the skillet, butter side down.
  • Divide half the cheese between the two slices (1/4 of the total on each slice).
  • Divide the bacon and glaze between the two slices.
  • Divide the remaining cheese evenly, then top with the remaining bread, butter side up.
  • Press lightly with a spatula.
  • Cook, covered, 5 minutes, or until well-browned.
  • Carefully flip each sandwich and cook, uncovered, another 5 minutes or until well-browned.
