Ingredients

  • 16 None chicken drumsticks (about 3 lbs)
  • 1/2 cup piri piri sauce
  • 4 cups finely shredded red cabbage
  • 4 cups finely shredded white cabbage
  • 1 cup firmly pack fresh mint, finely chopped
  • None None FOR THE PIRI PIRI DRESSING
  • 1 tbsp piri piri sauce
  • 1/2 cup peanut oil
  • 1/4 cup lemon juice

Method

  • Combine chicken and piri piri sauce in large bowl. Cover; refrigerate for 3 hours or overnight.
  • For the piri piri dressing, whisk all ingredients in a small bowl.
  • Preheat the grill on medium heat. Grill undrained chicken until browned and cooked through.
  • Place cabbages and mint in large bowl with dressing; toss gently to combine. Serve coleslaw with chicken.
