Ingredients
- 16 None chicken drumsticks (about 3 lbs)
- 1/2 cup piri piri sauce
- 4 cups finely shredded red cabbage
- 4 cups finely shredded white cabbage
- 1 cup firmly pack fresh mint, finely chopped
- None None FOR THE PIRI PIRI DRESSING
- 1 tbsp piri piri sauce
- 1/2 cup peanut oil
- 1/4 cup lemon juice
Method
- Combine chicken and piri piri sauce in large bowl. Cover; refrigerate for 3 hours or overnight.
- For the piri piri dressing, whisk all ingredients in a small bowl.
- Preheat the grill on medium heat. Grill undrained chicken until browned and cooked through.
- Place cabbages and mint in large bowl with dressing; toss gently to combine. Serve coleslaw with chicken.
