Ingredients

  • 4 Tablespoons Butter
  • 1 Tablespoon Miced Garlic
  • 1/4 cups Dark Rum
  • 1/4 cups Dark Brown Sugar
  • 1/4 cups Pineapple Juice
  • 1 teaspoon Ketchup
  • 1/4 teaspoons Cinnamon
  • 1/4 teaspoons Ground Cloves
  • 2 To 3 Ham Steaks
  • 3 cups Pineapple Chunks, On Skewers

Method

  • In a heavy saucepan, combine the butter and the garlic until the garlic starts turning brown, about 3 minutes.
  • Add the rum, sugar, pineapple juice, ketchup, cinnamon and cloves.
  • Simmer for 10 minutes or until the sauce gets nice and thick.
  • Remove from heat and cool to room temperature.
  • This can be made the day ahead and stored in the refridgerator.
  • Start the charcoal grill (or gas) and get the coals hot.
  • Grill the ham steaks 4 minutes on each side; when you flip them, coat both sides with the sauce.
  • When you have about 5 minutes left, add the skewered pineapple chunks to the grill and coat that with the rum sauce.
