Ingredients

  • 1 large hen, cleaned
  • salt and pepper
  • Marie's Cornbread For Dressing *
  • 8 eggs, boiled and diced
  • 2 large onions, diced
  • 1 Tbsp. poultry seasoning

Method

  • Clean hen and put in large pot.
  • Add water until almost covered.
  • Salt and pepper.
  • Cook until tender.
  • Prepare Marie's Cornbread for Dressing.
  • In large bowl, crumble cornbread and cover with broth.
  • Mix well.
  • Take meat off bony pieces of chicken, cut up fine and put in mixture.
  • Add eggs, onions and poultry seasoning.
  • Add more broth until dressing is not quite soupy.
  • Mix dressing well.
  • Grease roasting pan.
  • Pour dressing in pan.
  • Place hen on top of dressing.
  • Bake at 300° for 2 hours.
