Ingredients

  • 4 None chicken breast (about 1 lb), cooked
  • 1/4 cup mayonnaise
  • 1/4 cup tomato sauce
  • 2 None green onions, finely sliced
  • 1 tbsp chopped parsley
  • 1/2 None turkish flat bread, split, halved
  • 1 None firm ripe avocado, peeled, sliced
  • 4 slices cheddar or swiss cheese
  • None None ground paprika, to sprinkle

Method

  • Preheat broiler on high.
  • Cut each chicken breast into four long, thin slices. Combine mayonnaise with tomato sauce, half the green onion and parsley.
  • Lightly toast bread under broiler. Spread mayonnaise mixture onto each slice of bread. Top with one piece of chicken and an avocado slice and season to taste.
  • Top with cheese, sprinkle with a little paprika and remaining green onion.
  • Grill 1-2 minutes, until cheese melts and is golden. Serve.
