Ingredients

  • 6 slices OSCAR MAYER Bacon, chopped
  • 1 onion, halved lengthwise, then sliced crosswise King Sooper's 1 lb For $0.99 thru 02/09
  • 2 cloves garlic, minced
  • 1 Tbsp. grated gingerroot
  • 1 bunch Swiss chard (3/4 lb.), tough stems discarded, leaves cut crosswise into 1-inch-wide strips
  • 1 bunch spinach (1/2 lb.), tough stems discarded, leaves cut crosswise into 1-inch-wide strips
  • 1 bunch bok choy cabbage (3/4 lb.), tough stems discarded, leaves cut crosswise into 1-inch-wide strips Safeway 1 lb For $1.28 thru 02/09
  • 1/2 cup fat-free reduced-sodium chicken broth
  • 2 Tbsp. lite soy sauce

Method

  • Cook and stir bacon in Dutch oven or large deep skillet on medium heat until bacon is crisp.
  • Remove bacon from pan with slotted spoon, reserving 2 Tbsp.
  • drippings in pan.
  • Drain bacon on paper towels.
  • Add onions, garlic and ginger to drippings; cook and stir 5 min.
  • or until crisp-tender.
  • Stir in greens; cook and stir 3 min.
  • or until wilted.
  • Add crumbled bacon and remaining ingredients; cook 8 min.
  • or until greens are tender and most of the liquid is absorbed, stirring occasionally.
