Ingredients

  • 1 teaspoon green tea leaves gyokuro is best but Sencha or Gunp
  • 6 3/4 tablespoons hot water 3 1/2fl oz
  • 1 teaspoon caster sugar
  • 2 strips lemon zest
  • salt
  • freshly ground black pepper
  • 2 tablespoons hazelnut oil
  • 2 teaspoons white wine vinegar

Method

  • Infuse the tea leaves in the hot water (don't use boiling water) for 5 minutes then strain into a pan. Add the sugar and bring to the boil and simmer until the liquid is reduced to 2-3 tbsp. Add the strips of lemon zest and leave to infuse until cold.
  • Remove the lemon zest, add the oil, vinegar, salt and pepper to the liquid and whisk.
