Ingredients
- 1 can LeSueur peas
- 1 can cream of mushroom soup
- 1 medium onion, chopped
- 1 small jar pimento, diced
- 1 can water chestnuts, sliced
- 1 c. grated cheese
- 1/2 c. melted margarine
- 1/2 stack Ritz crackers
Method
- Saute onion.
- Drain half the liquid from the peas.
- Mix peas, soup, pimento and water chestnuts.
- Add onion.
- Pour into an 8 x 8-inch casserole.
- Top with cheese; crumble crackers in melted margarine and spread on top of cheese.
- Bake for 20 to 30 minutes at 350°.
