Ingredients

  • 24 ounces salmon, cut into 4 portions
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon yogurt
  • 1 garlic clove, grated
  • 1 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups avocado tzatziki (recipe below)
  • Avocado Tzatziki Sauce
  • 1 large ripe avocado, mashed
  • 1/2 cup plain Greek yogurt
  • 1/2 cup cucumber, peeled, seeded, grated, and squeezed to drain
  • 1 garlic clove, grated
  • 1 tablespoon fresh dill, chopped
  • 2 tablespoons lemon juice (about 1/2 lemon)
  • salt and pepper, to taste

Method

  • Avocado Tzatziki Sauce: Mix together all tzatziki ingredients (avocado thru salt & pepper); refrigerate until use.
  • The Rest: Marinate the salmon in the oil, lemon juice and zest, yogurt, garlic, oregano, salt and pepper for 20 minutes before placing it on a baking dish
  • Preheat oven to 400 degrees F. Place marinated salmon in oven and bake until the salmon just starts to flake easily, about 10 minutes.
  • Serve topping with the avocado tzatziki.
